If roast level in espresso is a free choice that is not the case in coffee grinding. To prepare an authentic espresso is acquired very finely almost to powdery ground coffee. Widely recommended type for espresso grinding is a burr grinder which features two disks, one that is stationary and one rotating. If the coffee is too fine ground espresso will be over-extracted because the water stays in contact with coffee to long, while the water will flow too fast through the coffee if it is not ground fine enough and espresso will be under-extracted. For that reason many consider a quality grinder even more important than a quality espresso machine.

There are two basic designs of burr grinders, the flat grinder with a flat open hole disk and the conical burr with a cone-shaped layout. Both models have two metal disks, one stationary and one rotating, and can be adjusted to create more consistent and precise grinds what results more favorable espresso. Both models also generally feature a slow motor what reduces heat and helps to preserve the natural flavor of coffee. Either of the two burr grinders is a good choice although some prefer conical burrs because it is believed that the cone-shaped layout better diffuse the heat. However, flat burr grinder are much more convenient for grinding of greater amounts of coffee.
